Cauliflower Supreme

Yield: 4 Servings


Ingredients

  • 1 head cauliflower, cut into florets

  • ½ cup plain yogurt, I chose goats organic plain

  • ½ cup shredded cheese, I am using dairy free

  • ½ tsp dry mustard

  • Dash of Nutritional Yeast

Instructions

  1. Steam or roast the cauliflower. I tried a new method to place it in a microwave safe bowl covered with 1/3 inch water and cook for 8 minutes.

  2. Drain and then transfer to a dish with the yogurt and other seasonings. There are 2 methods. Bake, uncovered for 8-10 minutes or until lightly browned.

Cauliflower is a member of the cruciferous family. Like broccoli, members of this family have been associated with reducing the risk of cancer.

Cauliflower also contains vitamins B1 (thiamine), B2 (riboflavin), B3 (niacin), B5 (pantothenic acid), B6 (pyridoxine) and B9 (folic acid). It contains omega-3 fatty acids and vitamin K. It serves as a good source of proteins, phosphorus and potassium. Cauliflower is a very good sourceof vitamin C and manganese, which are both powerful antioxidants

This awesome veggie is also anti-inflammatory and aids in digestion due to it’s fair fiber content.
