Roasted Red Pepper Hummus
Roasted red pepper hummus is a favorite dip for breads, crackers, dips and vegetables! Roasting gives it that extra zest!
Yield: Makes: 3 1/2 cups
Ingredients
1/2 cup water
6 ounces roasted red pepper, diced
2 tablespoons olive oil
½ cup tahini paste
2 ½ tablespoons lemon juice
2 garlic cloves, peeled
3 cups canned garbanzo beans, drained and rinsed
1 teaspoon cumin powder
Pinch of cayenne pepper
1 teaspoon Himalayan Sea Salt
Instructions
Place all ingredients into the food processor in the order listed and secure lid.
Turn machine on and slowly increase speed.
Process for 1 minute, pause to scrape sides of container. Continue blending until smooth. Add additional water if necessary to reach desired consistency.
Store in air tight container in the refrigerator for 1 week.
