Vegetables with Wild Rice Blend

This wild rice blend dish can be used as a stand alone dish, or a side to compliment any meal!


Ingredients

  • 2 cups carrots, sliced

  • 2 cups yellow squash, sliced

  • 2 cups zucchini, sliced

  • 1 large onion, sliced and ringed

  • 1-2 garlic cloves, minced

  • 1 cup frozen corn

  • 1 tomato, diced

  • ½-1 cup cashews

  • 1 Tbsp coconut oil

  • 1 Tbsp Earth Balance natural buttery spread with Olive Oil

  • Sea salt and pepper to taste

  • Other vegetable seasonings, optional

  • Wild Rice Blend

  • 2 cups Texmati® wild rice blend

  • 3 cups water

  • 2 tsp chicken broth or seasoning

  • 2 tsp Earth Balance natural buttery spread with Olive Oil

Instructions

  1. In a large frying pan, sauté all vegetables, except tomato, in coconut oil until desired softness. Add Earth Balance, diced tomato, and cashews to vegetable mix when they have 5 minutes left to cook.

  2. Season with sea salt and pepper.

  3. Serve over rice.

  4. Wild Rice Blend

  5. Combine all ingredients in a medium saucepan.

  6. Bring to a boil; stir once. Cover with a tight fitting lid; reduce heat and simmer for 15 minutes. Remove from heat and let stand (covered) for 5-10 minutes.

  • Cashews – Great source of copper, high in oleic acid – an anticancer component

  • Squash/Zucchini – May limit the ability of healthy cells to mutate into a cancerous state

  • Rice – Anti-inflammatory, fantastic source of fiber, may reduce the risk of colon cancer
